Tasty Thursday … where are you???

Oh my deepest apologies to all you wonderful followers! I meant to write this post at the beginning of the month but have been so busy … which is also the reason why I didn’t post a Tasty Thursday recipe. So much is going on this month that I wanted to explain why I will probably have to miss a few Tasty Thursdays this month. Ready? Here we go!

My sister is getting married this Saturday!!! YAY! But that means so much going on with that. Last minute wedding stuff that I’m helping her with, matron of honor duties, baking cupcakes for the wedding the day before the wedding, rehearsals, family coming into town, etc, etc…

I also officially turned my freelance graphic and web design to my full-time LLC company, Purely Designed LLC, as of February 8th! Tasty Thursday – Apple Crisp (WF&DF)

Another Tasty Thursday that is submitted by one of my readers!

This recipe comes from a bright, young woman just starting out on her Wheat free journey. She wanted to remain anonymous because she doesn’t think this recipe is good enough to tag her name on it. I disagree!!! But of course will keep it a secret. : )

Apple Crisp 01

Here is what you will need to make this easy dessert:

3-4 medium apples, sliced (4 cups)
¾ cup packed brown sugar
½ cup Bob’s Red Mill White Rice Flour
½ cup Bob’s Red Mill Gluten Free Quick Oats
⅓ cup butter flavored shortening, softened
1 Tablespoon ground cinnamon
1 teaspoon ground nutmeg

Heat oven to 375ºF. Grease bottom and sides of 8-inch square pan with shortening. Spread apples in pan. Using a Kitchen Aid mixer, or medium bowl, combine remaining ingredients until well mixed; sprinkle over apples. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with dairy free ice cream.

This dessert is really great! So simple to make and so flavorful too. I added a dash more of cinnamon on top of my pieces (yes that is supposed to be plural, I had many that day!) Don’t forget to top it off with some Luna & Larry’s Coconut Bliss and SO Delicious ice cream!!!

Tasty Thursday – Stuffed Peppers (WF&DF)

This recipe is one that everyone should add to their cook books!!! It is so tasty, makes PLENTY and is really great on your budget.

Stuffed Peppers 01

Here is what you will need to make this great dinner:

6-8 peppers
1-2 lbs ground beef
½ cup white onion, chopped
1 can diced tomatoes
2 teaspoons Soy sauce
½ cup uncooked white rice
½ cup water
¾ cup dairy free cheese
Salt and pepper to taste

Preheat oven to 350°F. Cut off top of peppers and hollow out the inside. In a large skillet, saute beef and onions until beef is browned. Stir in tomatoes, Soy sauce, rice, water, salt and pepper. Cover and simmer for about 15-18 minutes. Meanwhile bring a large pot of salted water to a boil. Boil peppers for 5 minutes, set aside once done. Remove skillet from heat once the rice is cooked and stir in the cheese. Stuff each pepper with the beef mixture and place open side up in a baking dish (I like to use bread pans if I’m making two at a time). Bake, covered, for 30-35 minutes.

This recipe works so well with any size family. For mine it’s just the hubby and me … so I cook up two peppers at a time when I need them. Keep the stuffing refrigerated until the next night or two for leftovers. Then all I have to do is boil two more peppers, stuff them and cook away!
